Nestled on Exhibition Street directly opposite Her Majesty’s Theatre, Bossley Bar & Restaurant has officially opened its doors to diners.  Inspired by its locale in the heart of Melbourne’s theatre precinct and those who love to frequent it, Bossley is the perfect destination for an array of dining experiences including   pre and post theatre, after work drinks, a weekend lunch or a fabulous private affair.

EVT Director of Culinary, Adam Petta said, “With Bossley we have taken inspiration from Melbourne’s eclectic culture and modernised it to match the experience that diners are looking for today. Bossley embodies the essence of the local community with a moody interior design, captivating menu and locally sourced produce,” said Adam.

The menu at Bossley has been thoughtfully curated by Executive Chef Paul Griffiths and his team. As an award winning chef, Griffiths shares his wealth of culinary expertise with Bossley, bringing a contemporary flair.

Diners will enjoy a modern Australian menu that heroes local premium meat and dairy products accompanied by flavours that are sure to impress. Ingredients are sourced exclusively from Victorian suppliers located in regions such as Diamond Valley, Port Phillip Bay, Lockwood, the Yarra Valley and Gippsland.

Bossley Executive Chef Paul Griffiths said, “We have worked closely with local growers and providores suppliers to deliver a menu rich in seasonality featuring an array of ingredients such as Line caught fish species from Port Phillip Bay, premium beef from the Gippsland region for our beef tartare & of course our House Made Burrata made, with cream from our local dairies. The Bossley menu is designed to be loved by locals and visitors to Melbourne alike,” he said.

Other menu standouts include Lockwood Hazeldene’s roasted half chicken infused with flavours of black garlic and macadamia pangritata and a Bossley’s signature Snickers- inspired dessert. Each dish can be paired alongside the extensive wine and cocktail list.”

Rydges Melbourne, which sits adjacent to Bossley, re-opens officially on Wednesday 19 July following an extensive transformation, offering guests a captivating and refreshingly local experience.

Bossley’s Restaurant is open for dinner from Tuesday to Saturday. Perfect for a pre or post-theatre beverage or bite to eat, Bossley Bar is open Sunday to Thursday 4pm, Fri & Sat 12pm – late.
